The AW is an important measurement to maintain the chemical stability of foods, the microbiological stability of personal care products, to improve the shelf-life of a product, to predict which microorganisms will be sources of spoilage.
For example, most of the bacteria do not grow at water activities below
0.91 and molds which are the most tolerant of low water conditions grow in the range of 0.61 - 0.94.
This parameter helps in controlling the non-enzymatic reactions too.

When using mirror technology, the mirror may become dirty due to contamination. If when this happens you don't get the Dirty Mirror Info, you might obtain completely wrong measurements. GBX has developed a way to inform the user if the mirror needs to be cleaned. This can be done very easily in only 3 minutes.

The technology of the sensor is not so much sensible to the external temperature. So for many applications, it is not so useful to measure at the same temperature

Thanks to a newly redesigned sensor, the response time is achieved in 2 to 5 min without the need to extrapolate the results. So the measure remains a true measure
The sensor is based on cooled mirror technology. So it doesn't need to be regenerated each 6 months and often re- calibrated.
In case of issue the sensor can be easily swapped . No need to resend the whole unit to the manufacturer.
But it has been designed with traceability in mind
